What Our Setup Needs
Smokin Zo's rolls up in either a truck or a trailer, and both bring the same smoked favorites and full-service flow to your event. We ask for about 40 feet of clear space to park and back in safely, whether that's the truck's 3-4 spots or the trailer's larger footprint with a 1/2 to full-ton truck pulling it. Once we're parked, we're fully self-sufficient and don't need electricity or hookups unless you'd like us to plug in.

How does the line actually move once guests start ordering?
We take orders 2-3 guests at a time and work ahead of the line, so a plate is going out the window within about a minute of ordering. During a rush we tighten up the menu and standardize the package so we can keep plates moving without cutting corners on flavor.
How much space do you need for parking and setup?
The truck needs about 30-40 feet, or 3-4 parking spaces, to back in comfortably. If we're bringing the trailer with the 1/2 to full-ton truck, plan for 50-60 feet since the trailer itself runs 20-30 feet. We arrive 30-60 minutes ahead of service and call when we get there.
Do you need power or water hookups on site?
Nope, we're fully self-sufficient and don't need electricity or hookups unless you'd like us to plug in for convenience. One less thing for you to plan around.
How do you communicate with hosts before and during the event?
Straight talk, fast answers, and we treat you like family from the first conversation, that's the whole point of how we run things. We'd rather over-communicate on menu, guest count, timing, and setup than leave you guessing on event day.
What happens if more guests show up than we planned for?
We always ask for your expected guest count up front and prep around that number, but our food isn't unlimited on the truck. If a crowd runs bigger than planned, we'll do everything we can to accommodate, though we're honest that it's not guaranteed, so an accurate headcount really helps us serve everyone well.
Can you handle allergies or special diets for our guests?
Yes, we can work with dietary restrictions and allergen needs, we just need to know ahead of time so we can plan for it properly. Let us know what your guests need when you book and we'll build it into the plan.
